Shane Smith’s Strawberry Almond Cookies

Almond cookies with chocolate covered strawberries on baking tray

Ingredients

55g butter

35g caster sugar

1 tbsp milk

75g plain flour

1 tsp cornflour

Pinch salt

Few drops almond essence

50g nibbed almonds

6 Bord Bia Quality Assured Irish Strawberries

50g melted chocolate

Method

  1. Preheat the oven to 190C/170C fan.
  2. Line a baking tray with parchment paper, set aside.
  3. Into a bowl, cream the butter and sugar until pale.
  4. Add the milk & almond essence. Mix to combine.
  5. To this add the flour, salt and cornflour.
  6. Mix to form a soft dough.
  7. Divide into 6 balls and roll each one in the nibbed almonds to coat.
  8. Place on the lined tray and using your thumb, press into the centre of each cookie.
  9. Chill for 20 minutes.
  10. Once rested, bake in the preheated oven for 12-15 minutes or until lightly golden brown.
  11. Remove and allow to cool.
  12. To decorate, dip a strawberry in dark chocolate and place in the centre of each cookie
